Rice Noodle and Cucumber Salad

Ingredients

  • 200g rice noodles
  • 1 medium cucumber
  • Handful of mint leaves

Dressing

  • 1 tsp lime zest
  • 1 tsp ginger, grated
  • 1/4 cup roasted peanuts, roughly pounded
  • 1 tbsp coconut oil
  • 2 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • Juice from 1/2 lime
  • 1 tbsp brown sugar
  • 2 tbsp peanut butter
  • 1 tsp chilli flakes

Preparation

  1. Mix all the dressing ingredients in a jar until well combined and set aside.

  2. Soak the rice noodles in water until soft.

  3. Thinly slice the cucumber.

  4. Chop the mint leaves.

  5. Place the soaked rice noodles, sliced cucumber, and chopped mint leaves into a large bowl.

  6. Pour the dressing mixture over the noodle mixture and stir carefully until everything is well coated.

  7. Sprinkle with roasted peanuts and chilli flakes before serving.
