Crispy Tofu and Satay Salad

Ingredients

  • 300g tofu
  • 1 tbsp soy sauce
  • 1 head of cos lettuce
  • 1/2 cup cucumber
  • 1/3 cup cabbage
  • 1 spring onion
  • 1/2 avocado

Satay dressing

  • 1 tbsp peanut butter
  • 1 tsp soy sauce
  • 1 tsp grated ginger
  • 1 clove garlic
  • 1 tbsp plant milk

Preparation

  1. Preheat your oven to 200 degrees and line a tray with baking paper. Coat the tofu in soy sauce and place in the oven for 30 minutes, spreading them out evenly to ensure crispiness.

  2. Add the cos lettuce, cucumber, cabbage, and spring onion to a large bowl. Mix all the satay dressing ingredients in a bowl until well combined. Once the tofu is cooked, place it on top of the lettuce along with the avocado and satay dressing.
