New Potato Salad with Tahini Dressing

Ingredients

  • 500g new potatoes
  • 100g green beans
  • 120g radishes
  • 1/2 red onion
  • 5g mint leaves

Dressing

  • 4 tbsp (60g) coconut yoghurt
  • 30g mayonnaise
  • 15g light tahini
  • Pinch of salt
  • Few twists black pepper

Preparation

  1. Trim and slice the green beans into thirds, thinly slice the radishes, finely chop the red onion, and roughly chop the mint leaves.

  2. Cook the potatoes in boiling water for 15 minutes until tender. Add the prepared green beans for the last 3 minutes of cooking, then drain and rinse everything in cold water.

  3. Place the potatoes and green beans in a large serving bowl. Add the sliced radishes, chopped red onion, and chopped mint leaves, and stir to combine.

  4. In a separate bowl, combine all the dressing ingredients and stir well. Pour the dressing over the salad and mix thoroughly.
