Mexican Style Eggs Breakfast

Ingredients

  • 1 red onion
  • butter
  • 1/2 red pepper
  • chopped garlic
  • chilli flakes
  • Mexican seasoning
  • salt
  • pepper
  • canned plum tomatoes
  • water
  • Tabasco sauce
  • balsamic vinegar
  • pinch of sugar
  • lime juice
  • mixed beans
  • chickpeas
  • 2 eggs

Toppings

  • chopped jalapeños
  • sour cream
  • guacamole
  • fresh coriander
  • lime wedges
  • toast or bread

Preparation

  1. Pan fry one red onion and half a red pepper in butter until slightly softened

  2. Add chopped garlic, chilli flakes, Mexican seasoning, salt, and pepper, and cook for a few minutes

  3. Add canned plum tomatoes, water to rinse the can, Tabasco sauce, balsamic vinegar, a pinch of sugar, lime juice, mixed beans, and chickpeas, then cook for a few minutes

  4. Break up the tomatoes, add two eggs, cover the pan, and cook over medium heat until the eggs are set

  5. Top with chopped jalapeños, sour cream, guacamole, fresh coriander, and serve with lime wedges and toast
