Vegan Omelette with Vegetable Filling

Ingredients

Filling

  • 1 medium tomato
  • 1/2 red onion
  • 1 cup white button mushrooms
  • 2 cups fresh spinach
  • 1 tbsp olive oil

Omelette mixture

  • chickpea flour
  • soy milk
  • nutritional yeast
  • baking powder
  • turmeric
  • black pepper
  • black salt

Preparation

  1. Chop the onion, tomato, mushrooms and add together with the oil in a large skillet

  2. Cook until onion is golden brown, then add the spinach and cook for an additional 3-4 minutes

  3. Prepare the omelette mixture by whisking together in a large bowl the chickpea flour, soy milk, nutritional yeast, baking powder, turmeric, black pepper and black salt

  4. Using a non-stick pan pour 1/2 of the mixture and cook for 3-5 minutes until bubbles appear

  5. Add 1/2 the filling on one side and fold in half

  6. Cook for an additional 2-3 minutes until ready

  7. Repeat for the 2nd one and enjoy!
