Vegan Omelette with Vegetable Filling
Ingredients
Filling
- 1 medium tomato
- 1/2 red onion
- 1 cup white button mushrooms
- 2 cups fresh spinach
- 1 tbsp olive oil
Omelette mixture
- chickpea flour
- soy milk
- nutritional yeast
- baking powder
- turmeric
- black pepper
- black salt
Preparation
Chop the onion, tomato, mushrooms and add together with the oil in a large skillet
Cook until onion is golden brown, then add the spinach and cook for an additional 3-4 minutes
Prepare the omelette mixture by whisking together in a large bowl the chickpea flour, soy milk, nutritional yeast, baking powder, turmeric, black pepper and black salt
Using a non-stick pan pour 1/2 of the mixture and cook for 3-5 minutes until bubbles appear
Add 1/2 the filling on one side and fold in half
Cook for an additional 2-3 minutes until ready
Repeat for the 2nd one and enjoy!
