Low-Sugar Peanut Butter Granola
Ingredients
- 1 tablespoon coconut oil
- 3 tablespoons caramel syrup or honey or maple syrup
- 3 tablespoons smooth peanut butter
- 1 teaspoon ground cinnamon
- Pinch of sea salt
- 1/2 teaspoon ginger
- Pinch of nutmeg
- 110g (2.5 cups) gluten-free jumbo oats
- 30g (1/4 cup) pumpkin seeds
- 3/4 cup cornflakes
Preparation
Preheat your oven to 180°C and line a tray with baking paper.
In a pan, melt the coconut oil, peanut butter and sweetener of choice together. Stir through the spices.
Combine all of the dry ingredients into a large mixing bowl.
Pour over the wet ingredients and stir everything together so that everything is evenly coated.
Spread this over your baking sheet and bake in the oven for 15 minutes, tossing halfway through to prevent burning.
