Banana Bread
Ingredients
- 130g (1 cup) spelt flour
- 95g (1/2 cup) coconut sugar
- 75g (3/4 cup) cocoa powder
- 3g (1 tsp) baking powder
- 3g (1/4 tsp) salt
- 90g (1/2 cup) chocolate chips
- 2 eggs
- 30g or 2 ripe bananas + 1/2 banana for the top
- 125g (1/2 cup) almond milk
- 70g (1/3) cup coconut oil, melted
Preparation
Preheat oven to 175 C
Sift together flour, baking powder, cocoa powder and salt
In a separate bowl, whisk eggs, coconut sugar and coconut oil until fluffy
Add in the sifted dry ingredients
Add in the mashed banana and almond milk
Add in all but 1 tablespoon of the chocolate chips
Top with half banana and the reserved tablespoon of chocoalte chips
Bake for 30-45 minutes (depending on tin size) or until a stick insterted comes out clean
