Banana Bread

Ingredients

  • 130g (1 cup) spelt flour
  • 95g (1/2 cup) coconut sugar
  • 75g (3/4 cup) cocoa powder
  • 3g (1 tsp) baking powder
  • 3g (1/4 tsp) salt
  • 90g (1/2 cup) chocolate chips
  • 2 eggs
  • 30g or 2 ripe bananas + 1/2 banana for the top
  • 125g (1/2 cup) almond milk
  • 70g (1/3) cup coconut oil, melted

Preparation

  1. Preheat oven to 175 C

  2. Sift together flour, baking powder, cocoa powder and salt

  3. In a separate bowl, whisk eggs, coconut sugar and coconut oil until fluffy

  4. Add in the sifted dry ingredients

  5. Add in the mashed banana and almond milk

  6. Add in all but 1 tablespoon of the chocolate chips

  7. Top with half banana and the reserved tablespoon of chocoalte chips

  8. Bake for 30-45 minutes (depending on tin size) or until a stick insterted comes out clean
