BBQ Jackfruit Sandwiches for Summer

Ingredients

  • 2 20 oz. cans jackfruit
  • 1 onion diced
  • 1 cup BBQ sauce
  • 1/2 tsp liquid smoke
  • 3 cloves garlic
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 6 whole wheat buns
  • optional: lettuce, coleslaw, avocado, grilled pineapple, etc.

Preparation

  1. Drain and rinse jackfruit.

  2. Heat a little water over medium heat and cook onion for 5-7 min. Add garlic and cook for 1 more min.

  3. Add jackfruit, BBQ sauce, 1/2 cup water. Stir and cover on medium-low heat for 15 min, and then stir again. Add water if needed and cook for 15 more min.

  4. Shred jackfruit with fork until it resembles pulled pork.

  5. Add garlic and onion powder, smoked paprika, liquid smoke, salt and pepper and stir. Add more BBQ sauce if desired.

  6. Make sandwiches and enjoy!
