Homemade Tanghulu Fruit Candy Sticks

Ingredients

  • 2 cups granulated sugar
  • 1 cup water
  • 700g fruit, whole small fruit works best, like strawberries or grapes
  • wooden skewers
  • non stick parchment paper

Preparation

  1. Wash the fruit & pat it dry. It’s important that it’s dry so the coating sticks.

  2. Arrange the fruit on the skewers. Make sure it’s secure but don’t let the skewer go all the way through. Set aside.

  3. Put the sugar & water in a small pot over a high heat & bring to a boil.

  4. Let the sugar melt and reach 300F degrees. If you have a candy thermometer great! If not you can test when it’s ready by dipping a spoon into ice cold water & then dipping the spoon into the syrup. If it hardens immediately, it’s right temperature.

  5. When the syrup is ready, dip the fruit into the sugar mixture, one at time. Work quickly but carefully. The sugar mixture is very hot! Make sure the fruit is completely covered.

  6. The sugar coating will harden almost immediately & let cool on the parchment paper.

  7. These are best eaten straight after cooling (or at least within a couple of hours)

  8. To clean the pan, let it sit in the sink filled with water for a few hours & it’ll dissolve.

Safety note

  1. Important note: the sugar mix gets very hot so be careful!
