Mango Bliss Balls

Ingredients

  • 120 g dried mango (no sugar added)
  • 150 g natural cashew nuts
  • 40 g coconut (unsweetened finely shredded) and extra for rolling
  • 1/2 tsp tumeric
  • 1 lime, zest
  • honey or maple syrup (optional)

Preparation

  1. Soak the cashews in hot water and the mango in room temperature water for 30 minutes

  2. Drain and rinse

  3. Add all the ingredients to a food processor and mix untill it formes a dough

  4. I like to leave small pieces of mango and cashew for the texture

  5. Roll into balls and coat with cocnut

  6. Store in an airtight container in the fridge for up to a week
