Vegan Banana Bread with Chocolate and Bananas
Ingredients
- 4 medium ripe bananas
- 1/4 cup vegetable oil
- 1/4 cup unsweetened nondairy milk
- 1/2 cup light brown sugar
- 1/4 cup white sugar
- 2 tsp pure vanilla extract
- 2 cup plain flour
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp baking soda
- 1/2 tsp salt
- sliced bananas, for topping (optional)
- 150g dark chocolate (optional)
Preparation
Preheat the oven to 180’C fan. Spray a loaf pan with baking paper or nonstick spray, then flour.
In a large mixing bowl mash the bananas then add the sugars, oil, vanilla, and almond milk, and whisk to combine.
Sift in the flour, baking soda, salt, cinnamon and ginger, and use a wooden spoon to mix.
Add in chopped chocolate or walnuts or whatever you fancy! Toss in flour before folding into batter to stop chocolate or nuts from sinking!
Transfer the batter to your prepared pan, and top with the extra banana slices.
Bake for about 50mins - 1hr, until a toothpick inserted in the center comes out with just a couple crumbs.
