Ingredients

  • This recipe is oil free. For the black beans I took a cup and a half of rinsed cooked black beans and sautéed it with 2 cloves of minced garlic, 1 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp thyme, and 1/2 tsp oregano. ?To prevent sticking I just used a couple of splashes of veggie broth. At the end of cooking, turn off heat and add lime juice and mix to fully coat beans. Adjust seasonings or add salt Serve immediately
  • For the grilled veggies we diced up green and red peppers as well as some red onion. You can add some salt and a little black pepper to them and sear on both sides until you notice grill marks, about 3-4 minutes if using an electric grill like I did
