Pulled Tandoori Chicken Buns

Ingredients

  • 900g boneless chicken breasts
  • 3 tsp tandoori powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1 tsp garlic powder
  • 1/3 tsp garam masala
  • 1/3 tsp ground black pepper
  • 1/2 tsp chilli powder
  • 1 tbsp oil + extra as needed
  • 1 level tsp salt
  • to mix filling:
  • 1/2 cup mayonnaise
  • 1/2 cup greek yoghurt
  • ground white pepper
  • extra tandoori powder
  • 12 white buns/rolls
  • butter as needed
  • round lettuce leaves

Preparation

  1. Marinate the chicken using the spices and oil listed above

  2. Cook the chicken either by pan frying or grilling until the chicken is fully cooked all the way through

  3. If grilling cook chicken for 6 - 8 mins each side, brush oil onto the chicken as it cooks to stop it being too dry and baste with the juices

  4. Cool the chicken down and shred/pull using either a hand mixer, two forks or your hands

  5. Dd the mayo, yoghurt and ground white pepper/extra tandoori powder if needed

  6. If there are any juices left in the tray after cooking the chicken, add that back in too, this helps moisten the shredded chicken

  7. Mix well

  8. Butter the buns. Assemble the buns using the lettuce and filling

  9. Enjoy
