Cacao Chip Ice Cream with Cherry Chia Swirl

Ingredients

  • for the cherry swirl
  • 1 cup of frozen cherries
  • 1/8 cup of agave
  • 1/8 cup of filtered water
  • 1/8 cup of chia seeds
  • for the ice cream
  • 2 cans of full fat coconut (refrigerated overnight)
  • 2 7.4 oz cans of condensed coconut milk (refrigerated overnight)
  • 1/4 cup of agave
  • 1 tsp of vanilla
  • pinch of pink salt
  • 1/3 cup of cacao chips

Preparation

  1. In a small pot on medium heat add cherries and agave

  2. Simmer for about 10 minutes

  3. Add mix to a blender and blend until smooth

  4. Pour back into pot and stir in water and chia seeds

  5. In a blender combine coconut milks, agave, vanilla, and salt

  6. Blend until smooth

  7. Transfer jam into a piping bag

  8. Pour just a little ice cream into a container of choice

  9. Pipe a swirl of jam on top and add a sprinkle of cacao chips to cover the layer

  10. Repeat this process until finished

  11. Freeze ice cream for 4 hours (may need longer or shorter depending on container size

  12. Once ice cream is ready serve and enjoy!
