Cozy Hearty Lasagna Soup
Ingredients
- 1 lb ground beef or chicken
- 1 yellow onion diced
- 3 garlic cloves minced
- 2 celery stocks
- 1 tbsp Italian seasoning
- 1 14 oz can diced tomatoes
- 1 24 oz jar pasta sauce
- 1 quart chicken broth or 4 cups
- 2 cups water
- 8 lasagna sheets broken into small pieces or 2 cups small shaped pasta like orecchiette
- 1 cup shredded mozzarella
- Fresh ricotta for serving
Preparation
Dice onion, garlic and celery.
Add a splash of oil to a large pot, add ground meat and onion and cook over medium heat until no longer pink.
Add garlic, celery and spices, stir and cook for another 2 minutes.
Add tomato sauce, crushed tomatoes, and broth, add noodles and bring to a boil.
Reduce to a simmer and cook for 20 minutes.
Add water (1-2 cups depending on your desired consistency) and mozzarella cheese.
Serve with a dollop of ricotta.
