Cozy Hearty Lasagna Soup

Ingredients

  • 1 lb ground beef or chicken
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 2 celery stocks
  • 1 tbsp Italian seasoning
  • 1 14 oz can diced tomatoes
  • 1 24 oz jar pasta sauce
  • 1 quart chicken broth or 4 cups
  • 2 cups water
  • 8 lasagna sheets broken into small pieces or 2 cups small shaped pasta like orecchiette
  • 1 cup shredded mozzarella
  • Fresh ricotta for serving

Preparation

  1. Dice onion, garlic and celery.

  2. Add a splash of oil to a large pot, add ground meat and onion and cook over medium heat until no longer pink.

  3. Add garlic, celery and spices, stir and cook for another 2 minutes.

  4. Add tomato sauce, crushed tomatoes, and broth, add noodles and bring to a boil.

  5. Reduce to a simmer and cook for 20 minutes.

  6. Add water (1-2 cups depending on your desired consistency) and mozzarella cheese.

  7. Serve with a dollop of ricotta.
