Creamy Vegan Tofu Pasta Sauce
Ingredients
- 1/2 cup silken tofu
- 2 cups crushed tomatoes
- 1/2 teaspoon salt
- 1/4 cup vegetable broth
- 2 Tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1 1/2 tsp dried basil
- Pasta of choice
Preparation
Blend silken tofu and crushed tomatoes until smooth.
Heat olive oil in a saucepan over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Stir in the blended tofu-tomato mixture, salt, dried basil, and vegetable broth. Bring to a simmer and cook for 5-10 minutes.
Meanwhile, cook pasta according to package instructions.
Toss the sauce with the cooked pasta and serve immediately.
