Creamy Vegan Tofu Pasta Sauce

Ingredients

  • 1/2 cup silken tofu
  • 2 cups crushed tomatoes
  • 1/2 teaspoon salt
  • 1/4 cup vegetable broth
  • 2 Tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 1/2 tsp dried basil
  • Pasta of choice

Preparation

  1. Blend silken tofu and crushed tomatoes until smooth.

  2. Heat olive oil in a saucepan over medium heat. Add minced garlic and cook until fragrant, about 1 minute.

  3. Stir in the blended tofu-tomato mixture, salt, dried basil, and vegetable broth. Bring to a simmer and cook for 5-10 minutes.

  4. Meanwhile, cook pasta according to package instructions.

  5. Toss the sauce with the cooked pasta and serve immediately.
