Three Ingredient Cacio e Pepe Pasta
Ingredients
- Spaghetti
- Salt
- 1/3 cup boiling water
- 1/2 cup finely shredded pecorino cheese
- 1/2 tablespoon black pepper
Preparation
Bring a large pot of water to a boil and add salt.
Cook spaghetti until al dente, which is 1 minute less than the package instructions.
Meanwhile, combine 1/3 cup boiling water, 1/2 cup finely shredded pecorino cheese, and 1/2 tablespoon black pepper; whisk together until well combined.
Add the cooked noodles to the mixture and toss with tongs for about 2 minutes.
Divide into two bowls and serve. Optionally, serve with a simple green salad.
Tips
Consider using fresh pasta where possible for better texture.
