10 Minute Mushroom and Edamame Panang Curry

Ingredients

  • mushrooms
  • frozen edamame beans
  • garlic
  • panang curry paste
  • coconut milk
  • basmati rice
  • mango chutney
  • spring onions
  • fresh coriander
  • cracked black pepper

Preparation

  1. Fry mushrooms and frozen edamame beans in garlic and panang curry paste for a few minutes.

  2. Add coconut milk and simmer for about 10 minutes.

  3. While simmering, cook basmati rice.

  4. Serve in a bowl topped with mango chutney, spring onions, fresh coriander, and cracked black pepper.
