10 Minute Mushroom and Edamame Panang Curry
Ingredients
- mushrooms
- frozen edamame beans
- garlic
- panang curry paste
- coconut milk
- basmati rice
- mango chutney
- spring onions
- fresh coriander
- cracked black pepper
Preparation
Fry mushrooms and frozen edamame beans in garlic and panang curry paste for a few minutes.
Add coconut milk and simmer for about 10 minutes.
While simmering, cook basmati rice.
Serve in a bowl topped with mango chutney, spring onions, fresh coriander, and cracked black pepper.
