Chinese Chicken Curry

Ingredients

  • 2 tbsp vegetable oil
  • 600g chicken thigh fillets cut into bite size pieces
  • 1 medium onion, sliced approx 1cm thick
  • 1 tbsp finely chopped ginger
  • 1 green chilli, deseeded and chopped
  • 1 tbsp finely chopped garlic
  • 1 heaped tbsp medium curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp chilli powder (optional)
  • 450ml chicken stock
  • 2 tbsp cornflour mixed with 2 tbsp cold water
  • 1 cup frozen peas
  • 2 tsp soy sauce
  • salt & pepper

Preparation

  1. Heat your wok up high and add the oil, ginger and chilli and stir fry for a minute

  2. Add the chicken and garlic and stir fry for a few minutes until the chicken in sealed

  3. Add the onion and stir fry for a couple of mins, before adding the spices and stir frying for another minute

  4. Add the stock and simmer on low for five minutes

  5. Add the cornflour mixture, the peas and soy sauce

  6. Cover and simmer on low for another five minutes

  7. Season to taste
