Creamy Sun-Dried Tomato Hummus Pasta

Ingredients

  • Pasta (amount as per package)
  • 1 medium onion
  • Olive oil (a little)
  • 7 sun-dried tomatoes (in oil)
  • 2 garlic cloves
  • 1 cup hummus
  • Pasta cooking water (as needed)
  • Salt to taste
  • Red chili flakes to taste

Preparation

  1. Cook pasta according to package directions and drain, reserving 2 cups of cooking water.

  2. Sauté sliced onion in a little olive oil for about 5 minutes.

  3. Add roughly chopped sun-dried tomatoes and sauté for a few more minutes.

  4. Add sliced garlic cloves and cook for another 30 seconds.

  5. Add hummus and 1/2 cup pasta cooking water, stir, and cook on low for a few more minutes.

  6. Optional: Blend the mixture until smooth, adding more pasta water as needed, then return to the saucepan.

  7. Stir in the cooked pasta, adding more pasta water as needed to achieve desired consistency.

  8. Season with salt to taste.

  9. Top with red chili flakes.
