Creamy Tomato Cashew Pasta

Ingredients

  • 2 cups cherry tomatoes
  • 2/3 cup cashews
  • 1/3 cup water
  • 1/2 cup fresh herbs, chopped
  • 2 cups cooked whole grain pasta

Preparation

  1. Cook pasta

  2. In another pot cook the onion, garlic and tomatoes with a splash of water for about 7 minutes

  3. Move to the blender, add the cashews, nutritional yeast, herbs, vinegar, seasoning and blend until smooth
