Crispy Tofu with Chipotle Sauce

Ingredients

  • Firm tofu, pressed
  • Juice of 1/2 lime
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 1 tablespoon cornflour
  • 2 shallots, finely chopped
  • 1 pepper, finely chopped
  • Handful of basil
  • Oil for frying

Sauce

  • 2 tablespoons soya sauce
  • 1 tablespoon chipotle paste
  • 1 tablespoon tomato paste
  • 1/3 cup water

Preparation

  1. Break pressed tofu into tiny pieces, coat with lime juice, salt and pepper and dust with cornflour.

  2. Heat oil in a skillet. When oil is hot add tofu and stir fry till crispy and golden.

  3. Push tofu to one side of the skillet and add a bit more oil to the other side.

  4. Add shallots into the oil and cook till translucent, then add peppers and basil mix well.

  5. Whisk all the ingredients listed under sauce and pour into the skillet.

  6. Season and serve with rice or tortillas.
