Orange Glazed Tofu with Fried Rice

Ingredients

  • 2/3 block firm tofu
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 3 tablespoons water
  • salt and pepper
  • 1 teaspoon sesame oil
  • juice of 1/2 fresh orange
  • 1 tablespoon vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons soy sauce
  • garlic powder
  • 1 serving leftover brown rice
  • frozen petite peas
  • 1 large carrot
  • canned sweet corn

Preparation

  1. Use firm tofu to ensure it holds together during cooking.

  2. Press 2/3 block of tofu to remove moisture and cut into large cubes.

  3. Prepare coating by mixing 2 tablespoons all-purpose flour, 1 tablespoon cornstarch, 3 tablespoons water, salt, and pepper.

  4. Dip tofu cubes in the coating and fry in 1 teaspoon sesame oil until crispy on all sides.

  5. For the orange glaze, mix juice of 1/2 fresh orange, 1 tablespoon vinegar, 1 tablespoon maple syrup, 2 tablespoons soy sauce, garlic powder, and 1 teaspoon cornstarch.

  6. Lower heat, add the glaze to the tofu, and simmer until thick.

  7. For fried rice, heat 1 serving of leftover brown rice in a pan with 1 teaspoon sesame oil.

  8. Add microwaved frozen petite peas, chopped large carrot (microwaved), and canned sweet corn to the rice and stir until combined.

  9. Serve the fried rice with the orange glazed tofu and any leftover sautéed vegetables, drizzled with sriracha for added flavor.
