Brown Sugar Glazed Tofu

Ingredients

Tofu Marinade

  • 1 block of extra firm tofu, pressed and drained
  • 3 tbsp soy sauce
  • Juice of half a lemon
  • 1 tsp garlic chili sauce
  • 1 tsp mustard
  • 1 tsp thyme
  • 1 tbsp maple syrup
  • 3 cloves minced garlic
  • 1/4 small onion, minced
  • 2 tsp smoked paprika
  • 2 tbsp nutritional yeast
  • 30-35 whole cloves (the spice)

Brown Sugar Glaze

  • 3 tbsp brown sugar
  • 1 tbsp spicy brown mustard

Preparation

  1. Press and drain the tofu thoroughly before starting.

  2. Place the tofu on a clean surface and use a toothpick or needle to poke holes all over its surface.

  3. Cut a shallow crosshatch pattern into one side of the tofu.

  4. In a bowl, mix together all the marinade ingredients.

  5. Put the tofu in a resealable bag and pour the marinade over it. Seal the bag, gently shake to coat the tofu, and refrigerate overnight.

  6. Preheat the oven to 375°F (190°C).

  7. Remove the tofu from the marinade bag and place it crosshatch side up on a lined baking sheet.

  8. Insert whole cloves into each crosshatch intersection.

  9. Bake the tofu in the oven for 20 minutes.

  10. While the tofu is baking, prepare the glaze by combining brown sugar and spicy brown mustard in a bowl.

  11. Warm the glaze in the microwave for 15 seconds, then stir to create a sauce.

  12. Carefully baste the tofu with the glaze until it's fully covered.

  13. Place the tofu back in the oven for 10 minutes.

  14. Remove from the oven and brush the remaining glaze over the top.

  15. Return the tofu to the oven and bake for an additional 15-20 minutes, or until the edges appear crispy.

  16. Remove the tofu from the oven and let it rest.

  17. Take out the cloves and use a sharp knife to cut the tofu into thin slices.

  18. Serve and enjoy with your meal.
