Bbq Tofu Bowls with Vegan Ranch Dressing

Ingredients

Tofu

  • 1 package extra firm tofu
  • 1/2 cup bbq sauce (e.g., @primalkitchenfoods golden bbq sauce)
  • 1 tbsp arrowroot starch

Vegan Ranch

  • 1/2 cup cashews
  • 1/2 cup water
  • 1/2 tsp dill
  • 1/2 tsp garlic
  • 1 tbsp apple cider vinegar
  • 1/2 tsp chives
  • 1/2 tsp parsley
  • Salt and pepper

Other

  • Corn
  • Red onions
  • Tomatoes
  • Black beans
  • Avocado

Preparation

  1. Press the tofu for 20 minutes, then cut it into cubes.

  2. In a bowl, combine the bbq sauce and arrowroot starch.

  3. Coat the tofu cubes with the bbq sauce mixture.

  4. Preheat the oven to 400°F (200°C).

  5. Place the coated tofu cubes on a baking sheet and bake for 15 minutes.

  6. Flip the tofu cubes and bake for an additional 15 minutes.

  7. Soak the cashews in water for at least two hours or soak in boiling water for 20 minutes.

  8. Blend the soaked cashews, water, dill, garlic, apple cider vinegar, chives, parsley, salt, and pepper until smooth.

  9. Prepare the corn by roasting it in the oven.

  10. Dice the red onions, tomatoes, and avocado.
