Filipino Adobo
Ingredients
- 2 tblsp oil
- 2 lb. potatoes, chopped
- 2 lb. vegan lamb chunks
- 1/2 cup of soy sauce
- 1/2 cup of vinegar
- 2 bay leaves
- 1 star anise
- 1tblsp garlic, minced
- 1 tsp black peppercorns
- water as needed
Preparation
In a large pot, nonstick if possible, heat oil on medium high heat
Add potatoes and cook half way
Stir them around so they don't stick
Add all the other ingredients except water
Stir, cover and lower heat to medium
Cook until potatoes are done to desired tenderness
Add water as needed
I ended up adding 1 1/2 cups of water towards the end of cooking
