Glammed Up Roasted New Potatoes

Ingredients

  • 500g new potatoes, halved
  • 1/2 red onion, peeled and finely sliced
  • Large handful of olives (we use green and black), halved
  • 1 bag of rocket/arugula
  • Juice and zest of 1 lemon
  • 3 tablespoons of apple cider vinegar
  • 1 teaspoon of coconut sugar
  • 1 tablespoon of wholegrain mustard
  • Large pinch of salt
  • Large pinch of pepper
  • Olive oil

Preparation

  1. Heat the oven to 220c fan.

  2. Half the new potatoes, then add them to a large baking tray with a drizzle of olive oil and a large sprinkling of salt. Roast for 35-40 minutes until the potatoes turn golden and are soft in the center.

  3. While the potatoes cook, place the sliced red onion in a bowl and pour over the apple cider vinegar, coconut sugar, and a pinch of salt. Mix well and leave to one side to pickle.

  4. Once the potatoes are cooked, let them cool, then place them into a large mixing bowl. Add the pickled red onion, halved olives, rocket/arugula, lemon juice, lemon zest, wholegrain mustard, a drizzle of olive oil, salt, and pepper.
