Glammed Up Roasted New Potatoes
Ingredients
- 500g new potatoes, halved
- 1/2 red onion, peeled and finely sliced
- Large handful of olives (we use green and black), halved
- 1 bag of rocket/arugula
- Juice and zest of 1 lemon
- 3 tablespoons of apple cider vinegar
- 1 teaspoon of coconut sugar
- 1 tablespoon of wholegrain mustard
- Large pinch of salt
- Large pinch of pepper
- Olive oil
Preparation
Heat the oven to 220c fan.
Half the new potatoes, then add them to a large baking tray with a drizzle of olive oil and a large sprinkling of salt. Roast for 35-40 minutes until the potatoes turn golden and are soft in the center.
While the potatoes cook, place the sliced red onion in a bowl and pour over the apple cider vinegar, coconut sugar, and a pinch of salt. Mix well and leave to one side to pickle.
Once the potatoes are cooked, let them cool, then place them into a large mixing bowl. Add the pickled red onion, halved olives, rocket/arugula, lemon juice, lemon zest, wholegrain mustard, a drizzle of olive oil, salt, and pepper.
