Sausage Apple and Blackberry Traybake

Ingredients

  • 8 sausages
  • 2-3 apples
  • 2 onions
  • 2 sprigs of rosemary
  • 4 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 150 ml chicken stock
  • 150 g blackberries

Preparation

  1. Preheat the oven to fan 190.

  2. Add the sausages, apples, onions, and rosemary to a roasting tray.

  3. Mix the maple syrup, Dijon mustard, garlic, and olive oil together and drizzle over the tray.

  4. Bake for 35-40 minutes.

  5. Remove the tray from the oven and warm it on a low heat on the hob.

  6. Pour in the chicken stock and simmer for a minute, stirring to get the sticky brown bits.

  7. Scatter over the blackberries to warm through.

  8. Serve with jacket potato or mashed potato.
