Sausage Apple and Blackberry Traybake
Ingredients
- 8 sausages
- 2-3 apples
- 2 onions
- 2 sprigs of rosemary
- 4 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 2 garlic cloves
- 150 ml chicken stock
- 150 g blackberries
Preparation
Preheat the oven to fan 190.
Add the sausages, apples, onions, and rosemary to a roasting tray.
Mix the maple syrup, Dijon mustard, garlic, and olive oil together and drizzle over the tray.
Bake for 35-40 minutes.
Remove the tray from the oven and warm it on a low heat on the hob.
Pour in the chicken stock and simmer for a minute, stirring to get the sticky brown bits.
Scatter over the blackberries to warm through.
Serve with jacket potato or mashed potato.
