Sesame Kimchi Stovetop Rice

Ingredients

  • 1 tbsp avocado oil or butter
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 tbsp lower sodium tamari or soy sauce, plus more to taste,
  • 1 teaspoon toasted sesame oil, plus more to taste

Preparation

  1. Heat a medium saucepan (around 4 quarts) to medium heat and add oil

  2. When oil moves quickly around the pan, add garlic, stirring constantly for 30 seconds

  3. Add water and bring to a boil

  4. Once boiling, immediately add rice, turn down to a low simmer and cover with a lid

  5. Cook for 18 minutes, then peek to see if all the water is gone

  6. If it is, set aside for five minutes, still covered, before uncovering and fluffing with a fork

  7. Cook a few more mins if needed

  8. Once rice is ready, stir in tamari and toasted sesame oil, then serve with kimchi and whatever protein / entree you’re having! You could also turn it into fried rice by adding some scrambled eggs and mixed vegetables
