Sesame Kimchi Stovetop Rice
Ingredients
- 1 tbsp avocado oil or butter
- 2 cloves garlic, minced
- 2 cups water
- 1 tbsp lower sodium tamari or soy sauce, plus more to taste,
- 1 teaspoon toasted sesame oil, plus more to taste
Preparation
Heat a medium saucepan (around 4 quarts) to medium heat and add oil
When oil moves quickly around the pan, add garlic, stirring constantly for 30 seconds
Add water and bring to a boil
Once boiling, immediately add rice, turn down to a low simmer and cover with a lid
Cook for 18 minutes, then peek to see if all the water is gone
If it is, set aside for five minutes, still covered, before uncovering and fluffing with a fork
Cook a few more mins if needed
Once rice is ready, stir in tamari and toasted sesame oil, then serve with kimchi and whatever protein / entree you’re having! You could also turn it into fried rice by adding some scrambled eggs and mixed vegetables
