Spicy Indian Masala Oats Breakfast
Ingredients
- Rolled oats 2 cups
- Onion finely chopped 1 medium
- One cup of pre cooked veg such as peas, carrots, green beans and cauliflower
- Teaspoon of oil for non stick pan
- 1 teaspoon of madras curry powder
- 1 teaspoon ground Cumin seeds
- Green chillies finely chopped 1-2
- Tomatoes finely chopped 1 medium
- Salt to taste
- Red chilli powder 1 teaspoon
- Tomato paste
- Ginger paste
- Garlic paste
- Turmeric powder 1/4 teaspoon
- Fresh coriander leaves chopped 2 tablespoons
Preparation
Heat oil in a non-stick pan, add cumin and curry powder.
Add green chillies and onion, mix well and sauté till the onion is golden.
Add tomatoes and salt, reduce heat, cover and cook for two to three minutes.
Add mixed veg.
Add red chilli powder and turmeric powder and mix well.
Add rolled oats, four cups water, tomato paste, garlic paste, ginger paste and cook for four to five minutes.
Add one tablespoon coriander leaves and mix well.
Serve hot, garnished with the remaining coriander leaves.
You can use vegan curry sauce from a jar; I added 1/2 cup of madras curry sauce and it needed a bit extra water.
I didn’t pre-roast the oats like many recipes recommend.
