Sweet Potato Gnocchis
Ingredients
- two sweet potatoes
- 300g buckwheat flour
- olive oil
- garlic
- basil
- pine nuts
- a sprinkling of feta
Preparation
Mash two sweet potatoes and mix with 300g buckwheat flour
Knead until a soft dough and consistent colour, cut the dough into four pieces, roll into sausages and cut into small gnocchis, drop into boiling water until they rise to the top after a few minutes
Finish by sautéing in a pan with olive oil, garlic, basil, pine nuts with a sprinkling of feta
