Sweet Potato Gnocchis


  • two sweet potatoes
  • 300g buckwheat flour
  • olive oil
  • garlic
  • basil
  • pine nuts
  • a sprinkling of feta


  1. Mash two sweet potatoes and mix with 300g buckwheat flour

  2. Knead until a soft dough and consistent colour, cut the dough into four pieces, roll into sausages and cut into small gnocchis, drop into boiling water until they rise to the top after a few minutes

  3. Finish by sautéing in a pan with olive oil, garlic, basil, pine nuts with a sprinkling of feta
