Traditional Slow-Cooked Colombian Beans

Ingredients

  • 3 cups kidney beans (soaked overnight)
  • 7 cups water
  • 2 tablespoons cooking oil
  • 6 bay leaves
  • 2 medium potatoes
  • 3 carrots
  • 1/2 teaspoon cumin
  • 2 teaspoons turmeric
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  1. Once your beans are soaked overnight, rinse your beans well.

  2. Add the beans, water, cooking oil and bay leaves in a slow cooker on high.

  3. After 3 hours in the slow cooker, add potatoes, carrots, cumin, turmeric, garlic powder, and salt and pepper.

  4. Cook for another 4 hours.

  5. Enjoy with some cooked rice.
