Vegan Black Fried Rice Dish

Ingredients

  • 1 Tbsp Rice Bran Oil
  • 4 Garlic Cloves (minced)
  • 1/2 Cup Peas (thawed)
  • 1/2 Cup Carrots (finely diced)
  • 2 x 250g Microwave Black Rice (cooked according to packet instructions)
  • 1 x Packet @nextfoodsofficial Bacon Style Strips
  • 1 x Packet @nextfoodsofficial Chick’n Chunks

Sauce

  • 3 Tbsp Light Soy Sauce
  • 1 Tbsp Smooth Peanut Butter
  • 2-3 Tbsp Maple Syrup
  • 1 Garlic Clove (minced)
  • 1-2 tsp Sriracha
  • 1 tsp Sesame Seed Oil

Preparation

  1. Prepare sauce by adding all ingredients to a small jar with a lid. Shake or stir. Taste and adjust to your liking.

  2. Chop or cut bacon style strips and chick’n chunks into small pieces. Cook according to packet instructions in a nonstick frypan. Set aside.

  3. In the same hot, non-stick frypan, add oil, garlic, peas and carrots. Sauté for 3-4 minutes, stirring occasionally. Add microwaved rice, crispy bacon, crispy chick’n and prepared sauce. Stir through. Cook over medium-high heat for 2 minutes, stirring frequently.

  4. Serve immediately with a sprinkle of toasted sesame seeds and a squeeze of fresh lime. Enjoy.
