Vegan Carbonara

Ingredients

  • 2 cups pasta (any, but i used spelt)
  • 1 onion (i used red)
  • 3 cloves of garlic
  • 1 cup chopped kale (frozen or fresh)
  • 2 cups non-dairy milk (any)
  • 2 tbs flour (i used arrowroot starch)
  • seasoning: 1/2 veg stock cube, or 1 tsp nutritional yeast, or 1 tsp black salt (what i used) + dried thyme

Preparation

  1. In a pot, cook the pasta according to directions

  2. Meanwhile, heat a skillet, and add to it the chopped onion and garlic and sauté for 5 mins

  3. Once the onions is brown, add kale (cook a little longer if using frozen greens), then add the plant milk and seasoning, turning the heat down to let it simmer

  4. Spoon out a small portion of the sauce in to a bowl, add the flour (or starch) and stir to mix until there’re no lumps

  5. Pour the mixture back in to the sauce

  6. Cook until the sauce thickens and the desired consistency is reached

  7. When the pasta is done, add it to the skillet, mixing well with the sauce

  8. Season with a dash of salt and pepper
