Vegan Chilli with Soy Mince and Vegetables

Ingredients

  • 100g soy mince
  • 5 medium tomatoes
  • 1 bell pepper
  • 200g corn
  • 100g lentils
  • 200g kidney beans
  • 1 large onion
  • 2 cloves garlic
  • 250ml vegetable stock
  • juice of 1/2 lemon
  • pepper
  • chili
  • 1 tablespoon cacao
  • tortilla chips
  • parsley
  • soy yogurt

Preparation

  1. Put all ingredients in a big pot and bring to a simmer.

  2. Cook for 20-30 minutes on low heat with the lid.

  3. Serve with parsley and soy yogurt.
