Vegan Chilli with Soy Mince and Vegetables
Ingredients
- 100g soy mince
- 5 medium tomatoes
- 1 bell pepper
- 200g corn
- 100g lentils
- 200g kidney beans
- 1 large onion
- 2 cloves garlic
- 250ml vegetable stock
- juice of 1/2 lemon
- pepper
- chili
- 1 tablespoon cacao
- tortilla chips
- parsley
- soy yogurt
Preparation
Put all ingredients in a big pot and bring to a simmer.
Cook for 20-30 minutes on low heat with the lid.
Serve with parsley and soy yogurt.
