Vegan Potato Meat Casserole
Ingredients
- 1 pack beef-less ground (Trader Joe's)
- 2 cloves garlic, minced
- 1 carton brown mushrooms, diced
- 1/2 cup diced tomatoes (canned)
- 4 large gold potatoes
- 2 tablespoons vegan butter (Miyoko's Creamery)
- 1 cup almond milk
Preparation
Peel and boil the potatoes.
Meanwhile, make the ground meat filling by sautéing garlic, mushrooms, and ground beef in oil over medium heat until mushrooms lose all their moisture, then add a bit of tomatoes or tomato paste and season with salt and pepper.
Once the potatoes are soft, mash them with vegan butter and almond milk to make a creamy mixture with some small chunks.
In a large casserole dish, layer half the mashed potatoes on the bottom, then add the meat filling, and top with the remaining potatoes.
Bake at 400 degrees for 25 minutes, then broil for another 5 minutes to brown the top.
