Mini Vegan Chocolate Muffins

Ingredients

  • 100g self raising flour (i use gf)
  • 100ml any milk (i use soya)
  • 50g margarine
  • 50g sugar
  • 2 tbsp maple or golden syrup
  • 1 heaped tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp lemon juice

Preparation

  1. Add lemon juice to a jug of milk and leave to curdle

  2. Mix the margarine, sugar and golden syrup together until smooth and creamy

  3. Sift and add the powders/flour/soda mix slowly

  4. Then add the curdled mix and stir in

  5. Pour mix into mini muffin cases

  6. Bake in the oven on 180c/ 350f/gas mark 4 for 12 mins (or 15-20 mins if bigger muffin cases)
