Mini Vegan Chocolate Muffins
Ingredients
- 100g self raising flour (i use gf)
- 100ml any milk (i use soya)
- 50g margarine
- 50g sugar
- 2 tbsp maple or golden syrup
- 1 heaped tbsp cocoa powder
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 tbsp lemon juice
Preparation
Add lemon juice to a jug of milk and leave to curdle
Mix the margarine, sugar and golden syrup together until smooth and creamy
Sift and add the powders/flour/soda mix slowly
Then add the curdled mix and stir in
Pour mix into mini muffin cases
Bake in the oven on 180c/ 350f/gas mark 4 for 12 mins (or 15-20 mins if bigger muffin cases)
