Pea, Ham and Cheese Muffins
Ingredients
- 1 large egg, beaten
- 3 tbsp olive oil
- 250ml full fat milk
- 10g chives, finely chopped
- 180g ham hock, shredded
- 125g cheddar cheese, grated
- 125g frozen peas
- 220g self raising flour
- 1 tbsp english mustard
Preparation
Preheat the oven to 200°/fan 180°
Grease a muffin tray with olive oil
Mix all ingredients together in a large bowl
Divide evenly into the muffin tray then bake for 20-25 minutes until golden brown and fully cooked through
Allow to cool on a wire rack, then tuck in!
Store in an airtight container in the fridge for up to 5 days or freeze them
