Pea, Ham and Cheese Muffins

Ingredients

  • 1 large egg, beaten
  • 3 tbsp olive oil
  • 250ml full fat milk
  • 10g chives, finely chopped
  • 180g ham hock, shredded
  • 125g cheddar cheese, grated
  • 125g frozen peas
  • 220g self raising flour
  • 1 tbsp english mustard

Preparation

  1. Preheat the oven to 200°/fan 180°

  2. Grease a muffin tray with olive oil

  3. Mix all ingredients together in a large bowl

  4. Divide evenly into the muffin tray then bake for 20-25 minutes until golden brown and fully cooked through

  5. Allow to cool on a wire rack, then tuck in!

  6. Store in an airtight container in the fridge for up to 5 days or freeze them
