Pea, Ham, and Cheese Muffins

Ingredients

  • 1 large egg, beaten
  • 3 tbsp olive oil
  • 250ml full fat milk
  • 10g chives, finely chopped
  • 180g ham hock, shredded
  • 125g cheddar cheese, grated
  • 125g frozen peas
  • 220g self raising flour
  • 1 tbsp English mustard

Preparation

  1. Preheat the oven to 200°/fan 180°. Grease a muffin tray with olive oil.

  2. Mix all ingredients together in a large bowl.

  3. Divide evenly into the muffin tray then bake for 20-25 minutes until golden brown and fully cooked through. Allow to cool on a wire rack, then tuck in!
