Vegan Muffin

Ingredients

  • For Muffin
  • ?2 very ripe bananas
  • ?1/2 cup natural creamy peanut butter
  • ?2 tsp baking powder
  • ?Handful of chocolate chips
  • For frosting
  • ?1 cup thick vegan yoghurt
  • ?3 tbsp natural creamy peanut butter
  • ?3 tbsp vegan cream cheese
  • ?4 tbsp powdered sugar
  • ?1 tbsp dark cocoa powder

Preparation

  1. In a food processor or blender add the bananas

  2. Peanut butter and baking powder

  3. Blend until smooth

  4. Old in a handful of chocolate chips and divide the batter in a greased muffin tin, makes 6

  5. Bake for about 15 minutes

  6. For Frosting

  7. Add all the ingredients to a bowl and mix well with electrical beaters until creamy and smooth

  8. Let sit in the fridge for 1 hour if too loose

  9. Enjoy
