Easy Vegan Gluten Free Peanut Butter Banana Muffins

Ingredients

Muffin

  • 2 very ripe bananas
  • 1/2 cup natural creamy peanut butter
  • 2 tsp baking powder
  • Handful of chocolate chips

Frosting

  • 1 cup thick vegan yoghurt
  • 3 tbsp natural creamy peanut butter
  • 3 tbsp vegan cream cheese
  • 4 tbsp powdered sugar
  • 1 tbsp dark cocoa powder

Preparation

  1. In a food processor or blender, add the bananas, peanut butter, and baking powder. Blend until smooth.

  2. Fold in a handful of chocolate chips.

  3. Divide the batter into a greased muffin tin; this makes 6 muffins.

  4. Bake for about 15 minutes.

  5. For the frosting, add all frosting ingredients to a bowl and mix well with electrical beaters until creamy and smooth.

  6. If the frosting is too loose, let it sit in the fridge for 1 hour.

  7. Enjoy!
