Easy Vegan Gluten Free Peanut Butter Banana Muffins
Ingredients
Muffin
- 2 very ripe bananas
- 1/2 cup natural creamy peanut butter
- 2 tsp baking powder
- Handful of chocolate chips
Frosting
- 1 cup thick vegan yoghurt
- 3 tbsp natural creamy peanut butter
- 3 tbsp vegan cream cheese
- 4 tbsp powdered sugar
- 1 tbsp dark cocoa powder
Preparation
In a food processor or blender, add the bananas, peanut butter, and baking powder. Blend until smooth.
Fold in a handful of chocolate chips.
Divide the batter into a greased muffin tin; this makes 6 muffins.
Bake for about 15 minutes.
For the frosting, add all frosting ingredients to a bowl and mix well with electrical beaters until creamy and smooth.
If the frosting is too loose, let it sit in the fridge for 1 hour.
