Warm Green Banana Flour Muffins Delight
Ingredients
- 1.5 cups of green banana flour
- 1/4 cup chia seeds
- 1/2 cup natural coconut yoghurt
- 1/2 cup water
- 2-3 tablespoons of maple syrup
- 3 small bananas or 2.5 large
- 1 tsp ground cinnamon
- 1/2 tsp vanilla bean paste
- 1.5 tsp gluten free baking powder
- Squeeze of lemon juice
Preparation
Preheat oven to 180 degrees.
Mix all ingredients except chia seeds in a blender until smooth and well mixed.
Spoon mixture into a bowl and add chia seeds, let sit for 10 minutes. If the mixture seems too runny after the chia seeds have soaked, add a little more flour and stir.
Spoon evenly into muffin tray; this should fill about 6 muffins.
Bake for 20-25 minutes until brown on top; the muffins may still look a little moist at this stage.
Let sit for 15 minutes before serving; the inside should then look just right.
Serve warm with coconut yoghurt, frozen blueberries, and a little maple syrup for a wholesome breakfast.
