Warm Green Banana Flour Muffins Delight

Ingredients

  • 1.5 cups of green banana flour
  • 1/4 cup chia seeds
  • 1/2 cup natural coconut yoghurt
  • 1/2 cup water
  • 2-3 tablespoons of maple syrup
  • 3 small bananas or 2.5 large
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla bean paste
  • 1.5 tsp gluten free baking powder
  • Squeeze of lemon juice

Preparation

  1. Preheat oven to 180 degrees.

  2. Mix all ingredients except chia seeds in a blender until smooth and well mixed.

  3. Spoon mixture into a bowl and add chia seeds, let sit for 10 minutes. If the mixture seems too runny after the chia seeds have soaked, add a little more flour and stir.

  4. Spoon evenly into muffin tray; this should fill about 6 muffins.

  5. Bake for 20-25 minutes until brown on top; the muffins may still look a little moist at this stage.

  6. Let sit for 15 minutes before serving; the inside should then look just right.

  7. Serve warm with coconut yoghurt, frozen blueberries, and a little maple syrup for a wholesome breakfast.

  8. Note that these muffins are gluten-free, dairy-free, egg-free, vegan, low-carb, and packed with nutrients, prebiotic-rich fiber, and essential anti-inflammatory fats, providing stable energy.
