Orange, Oat and Date No Bake Snack Bars

Ingredients

  • 300g dates
  • 250ml hot water
  • 120ml coconut oil
  • 500g gf oats
  • 100g desiccated coconut
  • 200g mixed nuts / seeds
  • the zest and juice of one orange

Preparation

  1. Line a baking tray with parchment and set aside. I used a square brownie tin to make thick ones but a shallow longer tin will work too for thinner bars - in a high speed blender (I used my @thenutribullet With the large cup) add the dates, water, coconut oil and orange juice and zest. - Blend until a smooth paste forms

  2. Pour the dry ingredients into a bowl and stir. Put half of the mixture into a food processor and pulse until roughly chopped

  3. Pour everything back into the same bowl and mix. Add the date paste and give everything a good mix until evenly coated. I use my hands sometimes because the mixture is quite firm and its easier/quicker than using a spoon. - transfer the mixture into the baking tray, pushing firmly and evenly so that the mixture is packed together. - put the tray in the freezer for around an hour or two until solid (overnight is ideal)

  4. Remove from the freezer and cut into bars. These will keep in the fridge all week in an airtight container
