Orange Oat and Date No-Bake Bars

Ingredients

  • 300g dates
  • 250ml hot water
  • 120ml coconut oil
  • 500g gluten-free oats
  • 100g desiccated coconut
  • 200g mixed nuts or seeds
  • Zest and juice of one orange

Preparation

  1. Line a baking tray with parchment and set aside.

  2. In a high speed blender, add the dates, water, coconut oil, and orange juice and zest.

  3. Blend until a smooth paste forms.

  4. Pour the dry ingredients into a bowl and stir.

  5. Put half of the mixture into a food processor and pulse until roughly chopped.

  6. Pour everything back into the same bowl and mix.

  7. Add the date paste and mix until evenly coated.

  8. Transfer the mixture to the baking tray, pressing firmly to pack it together.

  9. Place the tray in the freezer for one to two hours until solid, or overnight.

  10. Remove from the freezer and cut into bars.

  11. Store in an airtight container in the fridge for up to a week.
