Pumpkin Energy Bites
Ingredients
- 1 cup oats
- 1/2 cup walnuts or pecans
- 1/2 cup shredded coconut
- 1 tsp pumpkin spice
- 1 tbsp pumpkin purée
- 1 tbsp peanut or almond butter
- 3 medjool dates
Preparation
In a food processor, blitz oats and walnuts until it resembles a coarse flour
Add coconut, pumpkin spice, pumpkin purée, nut butter, and dates
Process on low until it comes together
Add a couple tbsp of water as needed
Roll into balls and store in an airtight container in the fridge
