Pumpkin Energy Bites

Ingredients

  • 1 cup oats
  • 1/2 cup walnuts or pecans
  • 1/2 cup shredded coconut
  • 1 tsp pumpkin spice
  • 1 tbsp pumpkin purée
  • 1 tbsp peanut or almond butter
  • 3 medjool dates

Preparation

  1. In a food processor, blitz oats and walnuts until it resembles a coarse flour

  2. Add coconut, pumpkin spice, pumpkin purée, nut butter, and dates

  3. Process on low until it comes together

  4. Add a couple tbsp of water as needed

  5. Roll into balls and store in an airtight container in the fridge
