Vegan Cinnamon Apple Crêpes
Ingredients
Crêpe
- 1 cup plain flour (can sub gluten free flour)
- 1 1/3 cup dairy free milk
- 1 tsp cinnamon
- 1 tbsp coconut sugar
- 3 tbsp oil
Apple filling
- 4 apples, finely chopped
- 1/4 cup water
- 1 orange, juiced
- 1 tbsp coconut sugar
- 1 tbsp cinnamon
Toppings
- 1/4 cup pecans, chopped
- 3 tbsp Biscoff spread, melted
Preparation
Prepare apples by adding apples, water, orange juice, coconut sugar and cinnamon to a large frying pan. Cook over a medium heat until soft and fragrant, adding more water as needed.
Prepare crêpes while apples are cooking. Mix flour, dairy free milk, cinnamon and coconut sugar together in a medium bowl until smooth and runny.
Heat a frying pan over a medium heat with 1 tbsp oil. Add 2 tbsp batter per crêpe, using the back of a spoon to smooth the batter out. Cook for a minute each side and repeat the process until all the batter is used up.
Add apples to each crêpe and gently roll up. Top with pecans and Biscoff spread. Enjoy.
