Vegan Cinnamon Apple Crêpes

Ingredients

Crêpe

  • 1 cup plain flour (can sub gluten free flour)
  • 1 1/3 cup dairy free milk
  • 1 tsp cinnamon
  • 1 tbsp coconut sugar
  • 3 tbsp oil

Apple filling

  • 4 apples, finely chopped
  • 1/4 cup water
  • 1 orange, juiced
  • 1 tbsp coconut sugar
  • 1 tbsp cinnamon

Toppings

  • 1/4 cup pecans, chopped
  • 3 tbsp Biscoff spread, melted

Preparation

  1. Prepare apples by adding apples, water, orange juice, coconut sugar and cinnamon to a large frying pan. Cook over a medium heat until soft and fragrant, adding more water as needed.

  2. Prepare crêpes while apples are cooking. Mix flour, dairy free milk, cinnamon and coconut sugar together in a medium bowl until smooth and runny.

  3. Heat a frying pan over a medium heat with 1 tbsp oil. Add 2 tbsp batter per crêpe, using the back of a spoon to smooth the batter out. Cook for a minute each side and repeat the process until all the batter is used up.

  4. Add apples to each crêpe and gently roll up. Top with pecans and Biscoff spread. Enjoy.
