Peanut Butter Jelly Crêpes

Ingredients

  • 1.5 cup plain flour
  • 1 tbsp coconut sugar (or regular sugar)
  • 1 tbsp oil, plus more for cooking
  • 1.5 cups dairy free milk

Fillings

  • 2 tbsp smooth peanut butter
  • 2 tbsp raspberry jam
  • 1/2 cup fresh berries

Preparation

  1. Add flour and sugar to a bowl and mix with a whisk to break up any lumps.

  2. Pour in the oil and milk and mix until smooth.

  3. If the mixture is too thick, add a tablespoon or two more milk.

  4. Heat a non-stick frying pan to medium heat and brush with a little oil.

  5. Pour in a ladle of batter and quickly move the pan to spread it evenly on the bottom.

  6. Cook until the edges start to curl and bubbles form, about 45 seconds per side.

  7. Flip and repeat.

  8. Keep crepes warm under a clean tea towel or in a low oven until ready to serve.

  9. Serve with jam, peanut butter and fresh berries.
