Vegan Pecan and Cashew Frozen Dessert
Ingredients
Base
- 1 1/4 cups pecans
- 10 medjool dates, pitted
- 1/2 tsp vanilla
- Pinch of salt
Filling
- 1.5 cups raw cashews, soaked
- 1 lemon, juiced
- 1/4 cup maple syrup
- 1/4 cup oat milk
- 1/4 vanilla oat creamer
- 1 tsp vanilla
Preparation
Pulse base ingredients until crumbly.
Press into a spring form pan (used a 9-inch).
Blend remaining ingredients until smooth.
Pour over base and smooth out.
Freeze for 4-6 hours.
Remove from freezer 10 minutes before serving.
Optionally add stewed strawberries and rhubarb on top.
