Vegan Pecan and Cashew Frozen Dessert

Ingredients

Base

  • 1 1/4 cups pecans
  • 10 medjool dates, pitted
  • 1/2 tsp vanilla
  • Pinch of salt

Filling

  • 1.5 cups raw cashews, soaked
  • 1 lemon, juiced
  • 1/4 cup maple syrup
  • 1/4 cup oat milk
  • 1/4 vanilla oat creamer
  • 1 tsp vanilla

Preparation

  1. Pulse base ingredients until crumbly.

  2. Press into a spring form pan (used a 9-inch).

  3. Blend remaining ingredients until smooth.

  4. Pour over base and smooth out.

  5. Freeze for 4-6 hours.

  6. Remove from freezer 10 minutes before serving.

  7. Optionally add stewed strawberries and rhubarb on top.
