Oat and Raisin Speculoos Cookies

Ingredients

  • 250g vegan butter block
  • 100g caster sugar
  • 200g dark brown sugar
  • 200g oats
  • 200g self-raising flour
  • 60g raisins or sultanas
  • 1 tsp Speculoos spice
  • Pinch of salt

Preparation

  1. Soften the vegan butter and mix it into the caster sugar and dark brown sugar.

  2. Add the oats, self-raising flour, raisins or sultanas, Speculoos spice, and a pinch of salt. Mix until a firm dough forms.

  3. Place large walnut-sized pieces of dough onto a lined baking sheet.

  4. Preheat the oven to 180°C (350°F).

  5. Bake the cookies for 10 minutes at 180°C (350°F).

  6. Allow the cookies to cool for a couple of minutes on the baking sheet, then transfer them to a wire rack to cool completely.
