Oat and Raisin Speculoos Cookies
Ingredients
- 250g vegan butter block
- 100g caster sugar
- 200g dark brown sugar
- 200g oats
- 200g self-raising flour
- 60g raisins or sultanas
- 1 tsp Speculoos spice
- Pinch of salt
Preparation
Soften the vegan butter and mix it into the caster sugar and dark brown sugar.
Add the oats, self-raising flour, raisins or sultanas, Speculoos spice, and a pinch of salt. Mix until a firm dough forms.
Place large walnut-sized pieces of dough onto a lined baking sheet.
Preheat the oven to 180°C (350°F).
Bake the cookies for 10 minutes at 180°C (350°F).
Allow the cookies to cool for a couple of minutes on the baking sheet, then transfer them to a wire rack to cool completely.
