Cornmeal Pancakes
Ingredients
- 1 1/2 cup cornmeal
- 1 cup almond milk
- 2 tsp baking powder (activated w splash of apple cider vinegar)
- 1 tsp baking soda
- 2 tbsp maple syrup
- 1 tbsp ground flax
Preparation
Mix all the batter ingredients in a large bowl, it should be thinner than regular pancake batter
Let the batter sit 5-10 mins for the cornmeal to loosen & flax egg to set
On a large nonstick pan, pour 1/4 cup of batter & cook on each side 1-2 mins until bubbles form & underside is a bit brown
Top with maple syrup, almond butter, vegan butter or fresh fruit
