Cornmeal Pancakes

Ingredients

  • 1 1/2 cup cornmeal
  • 1 cup almond milk
  • 2 tsp baking powder (activated w splash of apple cider vinegar)
  • 1 tsp baking soda
  • 2 tbsp maple syrup
  • 1 tbsp ground flax

Preparation

  1. Mix all the batter ingredients in a large bowl, it should be thinner than regular pancake batter

  2. Let the batter sit 5-10 mins for the cornmeal to loosen & flax egg to set

  3. On a large nonstick pan, pour 1/4 cup of batter & cook on each side 1-2 mins until bubbles form & underside is a bit brown

  4. Top with maple syrup, almond butter, vegan butter or fresh fruit
