Oat Pancakes with Spiced Apples

Ingredients

For the pancakes

  • 450ml soya milk
  • 300g White’s Oats
  • 50g sugar
  • 1 tbsp apple cider vinegar
  • 2 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon

For the apples

  • 4 eating apples
  • 1 lemon, juice only
  • 3 tbsp soft brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • Pinch of ground cloves

Preparation

  1. Peel and core the apples and chop them into small pieces.

  2. Put the chopped apples into a pan with lemon juice, sugar, and spices.

  3. Heat the mixture on medium-high heat, stirring until the sugar dissolves, and bring it to a simmer.

  4. Simmer the apple mixture until the apples are soft, stirring occasionally.

  5. While the apples are cooking, mix together the soya milk and apple cider vinegar to create a buttermilk-like mixture.

  6. Blend the oats into a fine flour using a blender.

  7. In a large bowl, combine the oat flour, sugar, baking powder, and cinnamon. Pour in the milk mixture and mix well.

  8. Heat a frying pan with a light coating of oil and cook spoonfuls of the batter until brown on both sides.

  9. Serve the pancakes with the spiced apples, maple syrup, and vegan cream or yogurt.
