Vegan Fluffy Blueberry Banana Fig Pancakes
Ingredients
- 1 cup gluten-free flour blend
- 1/2 cup buckwheat flour
- 3 teaspoons baking powder
- pinch of salt
- heaping teaspoon pumpkin pie spice
- 1 flax egg
- 1 1/2 cups cashew milk
- 1/4 cup coconut kefir
- 1 tablespoon apple cider vinegar
- 2 tablespoons melted coconut oil
- 1/2 to 1 cup water
- 1 cup wild blueberries
Preparation
Whisk dry ingredients.
Whisk flax egg.
Whisk wet ingredients and let sit for 5 minutes.
Add wet to dry, add flax, stir until no dry is left.
Add more water if needed.
Add blueberries and make pancakes.
