Vegan Fluffy Blueberry Banana Fig Pancakes

Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup buckwheat flour
  • 3 teaspoons baking powder
  • pinch of salt
  • heaping teaspoon pumpkin pie spice
  • 1 flax egg
  • 1 1/2 cups cashew milk
  • 1/4 cup coconut kefir
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons melted coconut oil
  • 1/2 to 1 cup water
  • 1 cup wild blueberries

Preparation

  1. Whisk dry ingredients.

  2. Whisk flax egg.

  3. Whisk wet ingredients and let sit for 5 minutes.

  4. Add wet to dry, add flax, stir until no dry is left.

  5. Add more water if needed.

  6. Add blueberries and make pancakes.
