Tasty Corn Fritters for a Quick Lunch

Ingredients

  • 75 g flour (used Anita’s certified GF, 1/2 cup + 2 Tbspn)
  • 1/4 tsp salt
  • 1 egg
  • 115 ml milk (1/2 cup)
  • Pinch sugar
  • 1 can cream corn (398 ml, 14 fl Oz)

Preparation

  1. Beat eggs and milk together.

  2. Add to the dry ingredients and then add the entire can of corn. Stir well to combine.

  3. Pour 1/4 cup of the mixture into a hot, well-oiled pan.

  4. Cook for about 1.5 minutes per side on medium to high heat.

  5. Note: This recipe makes 14 fritters. For gluten-free option, use Green Giant creamed corn as other brands may cause symptoms.
